Notes
- A dark steel Detroit pan gives the closest crust. A cast-iron skillet or heavy dark baking pan also works well.
- No stone or steel: preheat a heavy baking sheet upside down on the lowest oven rack and place the pizza pan directly on it. This gives the base stronger bottom heat.
- Light-coloured aluminium pans brown more slowly. Use the full 45 ml (3 tbsp) corn oil and allow extra baking time if needed.
- For pepperoni pizza, use 115-170 g (4-6 oz) sliced pepperoni. Place it over the cheese.
- Other topping ideas include cooked Italian sausage, mushrooms, onions, green peppers, bacon, ham, black olives or banana peppers. Keep the total topping weight modest so the centre bakes through.
- For a stronger caramelized edge, replace up to 85 g (3 oz) of the mozzarella with mild cheddar or Monterey Jack.
- The dough may be refrigerated after kneading for up to 24 hours. Let it warm for 60-90 minutes before pressing it into the pan.
